2015 was a difficult year for most vineyards growing white grapes. We source all of our Pinot Grigio from Pontin del Roza a cooler climate vineyard located within the Yakima Valley. A vineyard like Pontin del Roza allows the fruit to mature slowly while retaining its acidity. Pinot Grigio is typically the last grape we pick.
We pressed our Pinot Grigio whole cluster, allowing there to be less skin contact, giving the wine elegance with minimal tannins. The juice is fermented at 50-55F to preserve the freshness of the fruit. The juice is fermented in a temperature controlled stainless steel tank to keep the flavors of the grapes fresh and lively.

The wine has citrus aromas of lemon and lime with underlying layers of gooseberry and honeydew melon.
On the palate, the wine has lush flavors of fresh pear and more gooseberry. The wine has a silky finish with hints of lemon custard.
Pairs nicely with hard cheeses such as pecorino. Goes great with our Northwest cuisine such as crab, shrimp, oysters and shellfish.
